Hey boys, not really a breakthrough in cooking techniques but thought i would share it with you all anyway.
Recently on my trip to Mallacoota i caught heaps of bream, i normally just catch and release them but i kept a few for the table, heres what i did and they were great.
Scale, gut and remove gills. Score skin and oil lightly, season with salt and pepper, whack a couple of slices of lemon inside the cavity and put them straight on a hot BBQ plate.
The result was a crispy skin with really nice light flavoured flesh and very healthy to boot.
Try it.
Ps also works great with snapper.

Nice one Bilby, they are one of my favourite eating fish. I love 'em prepared the same way and shallow fried in Olive Oil and Butter.
