Smoking it at 60* is enought to cook the meat and preserve it apparently.

I bought a small grill, just need to make a lid for smoking
tried turkey eggs once but the hens tend get upset when they don't hatch at 21-22 days 
will have to buy some chips and give it a go, I used to cold smoke years ago, chicken was my favored species but then I used to pile 20 eggs under broody hens so having a spare chook or 10 wasn't an issue

Just use an old deep baking tray turned upside down for a lid. Use some foil around it to fill the gaps if you need to.

I've never kept salmon as a lot of people I spoken to have said it's no good but this thread has got me interested. Might have to try this with the kamado joe. Cheers Reeling for digging this one up.
