Yesterday I cooked up the 57cm Brown Trout I caught on Saturday at Wendouree. I was looking for a different way to cook it instead of just pan frying. So I googled around and came up with this:

That's not my dish pictured but it looked pretty similar, I even did the full slad to go with it. The trickiest part was pin boning the fish to get nice fillets, otherwise it was fairly straightforward. The family gave it a big thumbs up, so I highly recommend this for anyone wanting to try something different. It would probably also work well with a variety of other species.

I had a fillet of my snapper with honey mustard tonight..Did cheat and use a marinate though..but yeh yum
