Tonight for dinner I had "homestyle flathead fillets, I found the recipe in a cookbook and decided to try it. its pretty basic.
Alot people do their flattie fillets by dipping them in beaten egg then seasoned flour, this recipe tells you to do it the other way, I use ricebran oil coz its got no cholesterol and is a high heat low smoke oil.
so roll your fillets in seasoned flour first, have the oil hot, not to hot though, hold bowl with beaten egg and dip the fillets one at a time in the egg and bung then skin side down in the pan, cook gently, turning when first side is a nice golden brown.
Simple but very tasty served with chips and a beer or two.

They look fantastic, I like dropping them in a hot pan with a little olive oil, 4 -5 cherry tomatoes cut in half and squeeze 2 lemons in there straight away. 30 secs-1 min each side, bang.
I'm going to try your recipe though tonight.
