Mine First
600g Rib Eye on the Bone (store bought as didnt have time to get the cut i prefer)
Marinated in sea salt over night, added virgin olive oil infused with garlic
Left to rest for 1 hour until reached room temp
Placed in 70deg oven for 3.5 hours turning every 30 mins
Rested for 30 minutes once meat temp reached 65
Sauté in butter for 30 seconds each side, rest for another 5 minutes
Accompanied by some Dijon Seeded Mustard (i dont like to over complicate the flavour)

JIMS LAMB,
6 kilo lamb, slow cooked 8hrs in extra olive oil, few herbs, not turned at all, just fish for 8hrs, goto Jims and eat till ya drop. To top it off Bel (bread dipped in the olive oil)

Great post Brett - gonna be hard to beat that!
Couple of mine from this year. First off, I started making fish stock from my Snapper and Flathead frames. Really easy and loaded with flavour.
Used it in a mediterranean style seafood chowder with prawns, fish, Mussels and pippies and topped with Gruyere cheese and toasted baguette.
Last one is pretty standard around here, but always a winner, fresh caught Salt and Pepper squid with Bok Choy, rice and a sesame/soy/brown sugar/chilli/lime asian dressing.
Sorry about the low res shots - all from the iPhone and generally in too much of a hurry to eat to get the camera out.

How'd the chowder turn out?
Did you strain through a cloth or proper fibre strainer or just ladle out the liquid?
Was it a strong broth or just a perfect mix?

The chowder was delicious. I roughly followed a basic recipe, but kinda made it up as I went along. I want to do a proper French Bouillabaisse from scratch next time.
For the stock, I basically filled a pot with a large snapper frame, a couple of pinky frames and a Flatty frame (all with heads), browned them slightly and added the vegetable ingredients and water, brought it to the boil and simmered for 40 mins. Tested it along the way till I was happy and strained it through a wire kitchen sieve to get rid of the bones and scales. Froze it in two batches and it turned out pretty well with a consistency not too dissimilar to the shop bought stuff. There's heaps of variations on the interweb, but they're all pretty similar. Important to use non-oily fish like Snapper or Flatty.
