Original recipe uses chicken but I thought it might go ok with chunks of snapper.
oil, onion, garlic, coriander, yoghurt, coconut cream/milk, apricot jam, thai red curry paste, kafir lime leaves, lemongrass and a haunch of Mornington snapper.
Served with rice and some green beans came up a treat.

Just a tip...if you can make the sauce the day before the flavors develop big time. Leftovers tonight were superb.
