if you can't get crays, scallops go really well as well.
I don't eat much seafood but that makes my mouth water.
I bet Subway don't have that one!

there have been some great suggestions, I love a cheese sandwich, but the topic was my favorite sandwich. fresh seafood on fresh bread, it doesn't get any better.

fresh seafood done simply, perfectamundo. even fresh fish in a sandwich is magnificent, some chopped lettuce and a squeeze of mayo.
Well past the edge, almost at the point of no return.

One Bathurst we had fresh home baked rolls and bread with drums of fresh yabbies, 18 gallon keg, 4 TV's outside so no matter where you were you could see and for a bit of ambiance, a burnout patch in the shed for sound and smell senses to be filled to the extreme.. anyway....... I made a slight pig of myself :o hard to believe I know  . Ended up with three days of heart burn and a yeast infection in the gut.

Sounds good though Mav, I lurv my scallops!!!!

Thought of one that may be a little "out there" for some people, even though it's simple.

White bread (toasted)
Real Butter
Beetroot

Eat it straight away or it goes soggy

mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm

Whiting fillets cooked in parmesan and parsley bread crumbs (crunchy), bit of lettuce, Aioli with finely chopped anchovy mixed in, and spread one side of the roll with goats cheese.

I thought I was the only one who liked that. The problem is, you have to eat it straight away as the honey crystalizes if you leave it too long.
