Seems I can't go out with out catching a monster pike at the moment so here is the best recipe I've found to deal with their soft flesh.

Will need 400-500g of skinned pike fillet cut up ( one 70cm pike)
1/2 cup rice flour
tablespoon fish sauce
1 egg
3 tablespoons coriander leaves chopped
3 tablespoons red curry paste. (Get spirit house paste if you can find it, It's awesome)
100g peas
3 finely chopped spring onions.

Fish in processor for 20sec until smooth. Put in rice flour, fish sauce, coriander, curry paste, some chili if you want. Process for 10 secs.
Put in bowl and mix in spring onions and peas.
Make patties with wet hands and cook on medium heat.
I like sweet chili sauce and natural yoghurt with mine.

Nice recipe, try some finely chopped kafir lime leaves in the mix for a really thai flavour. Also I have added squid and prawns into the mixer with the fish, makes a really nice flavour, slightly different.
Well past the edge, almost at the point of no return.

Squid is a definite easy add on.
As far as the pike go, I'm trying to thin the numbers one per trip. They are great fun, look terrifying, but don't excite me like a good pinkie.

I have found with pike that if you fillet them and place them in the fridge for a day or so, they crumb up really good, and aren't soft at all. I actually like them, a bit underated i reckon. I was reading an old fishing book circa 1970's and they said Pike command high prices at the fish markets. I think some fish become untrendy while others snapper, dory, atlantic salmon at the moment are the fish that are trendy.
Remember couta and chips ???? what happened to that ???

Love the taste of Pike, just not the texture.

I've never found pike soft - I'm talking about the short-finned pike (snook), not the long-finned (stinky pike)...

They make great fillets and I even rate them above snapper for taste and texture - particularly when battered and fried 'fish-n-chip shop' style...

The largest fish landed in Australia was 109 cm long, weighing 5.6 kg. Growth studies on South Australian fish have estimated the maximum age at about 20 years. Most snook taken by anglers weigh between 0.8 and 1.5 kg, although fish in excess of 3 kg are not unknown, and the species may have a maximum growth potential in excess of 4 kg.

Now that would put up a great fight on light gear.

That's very interesting... The biggest I've seen was actually 110cm, landed from San Remo jetty on half a pillie!

There was a photo of it in on old issue of S.E Fishing magazine...
