Braised trout

Caught anything lately? Post up how you cooked it here and if it was a success. Doesn't only have to be fish....

Braised trout

The first time SWMBO suggested braising my Tooliorook trout I shied away, salivating over the thought of smoking it. I relented and handed over a few spare cutlets and this was the result :

The next time I pretty much handed her the fish as I walked in the door. Lesson learned. When a Vietnamese girl wants to cook your fish, you let her.

Pineapple and bit of juice (sub tomatoes and soy sauce for a more robust flavour as per the first picture)
sliced mushrooms
lemon juice
oyster sauce
water
palm sugar
garlic
fish of the day...the trout was sublime, I'm assured it'll be better with snapper.
serve on rice garnish with coriander

All the hard ingredients were mixed over a low flame for a few minutes till they got a bit of colour, the wet stuff was mixed in and bought to a fast simmer then the fish added for 10 to 15 minutes only with the lid on. The cutlets were 3 to 4 cm thick and didn't take long at all. It's also one of those dishes that is at least as good the next day if not better.
