Rick Stien, for those who do not know is a great fish/seafood chef from Padstow, UK. I have a few of his books with my latest edition being his "Fish and Shellfish" book. Great looking book that has front section of different prep and cooking methods for different fish/sheelfish. Followed by sectioned book based on fish type. All recipes has a list of "Alternative Fish" you can substitute into the recipe if the fish of choice cant be bought or caught ;)

Anyways, second time we've cooked up his Chargrilled snapper with Mango, prawns and chilli salsa. Great for that summer bbq with friends, a light lunch, or starter with friends :)
