For KGW's its one of the best, regarded by many as better than squid and alright on the chew for human consumption also.

Fresh cuttlefish is great bait for kingfish. The body makes thick strips and the tentacles thread nicely onto a bighead.

The head is in the freezer along with the hood cut into strips, for such a big fish the hood is small but thich and the ink hmm we i think they have more ink than hood too! Having not tasted any yet im of the opinion that the next one cought will go for bait, cleaning them is a lot of work lol did i mention the ink?lol
By bighead, you mean sp jighead im assuming, i did buy some for sp's for the kings

Cut the individual tentacles off and they should be similar to a soft plastic jerk bait. Thread them onto a jig head and troll along - natural tasty SP that kings love.

Don't throw the ink away.
You can make the best risotto out of it.
