This is an awesome way to use all those frames when you fillet fish. It seems like a lot of time to spend cooking, but really you do stuff all and just let the thing cook.

You will need.
Fish frames (I used yellow eye mullet)
keep some fillets, one small one per bowl.
one red onion, cut in half
four cloves of garlic, just punched so it gets broken but stays in one piece
ten or so pepper corns
salt to taste
water.
olive oil
Risoni or starlini pasta (it's really small)

heat up a large pot and put in some olive oil.
Put in onion flat side down, pepper and garlic. Let it all brown slightly.
shake the pot and put in your fish frames, wait one minute and then add enough water to cover plus 20-30 mm. (This is not a science)
Put the lid on and let it simmer while you go drink beer for 2-3 hours, checking every hour.
turn off the heat and let it cool down on the stove with the lid on for an hour or so.
Put whole lot in fridge and retrieve the next day for lunch time or dinner.
put it all through a sieve or colander to remove all the chunks giving you an incredible stock.
bring stock up to a simmer and add salt little bits at a time until you get the taste right.
get it boiling and add your pasta and cook to directions on packet. (you can add your saved fillets at the end if you want them in)
Serve in bowls and, viola.
Chopped chives on top would be a nice touch.
