myself and best mate consider ourselves elite food eaters. Which means u need to know how to cook..
Amongst our favs is a batter u will not regret
Add 49%plain flour 49% self raising and 2% baking power then enough water til its slightly runny.
The trick is to use a super hot oil and dry flesh causing a reaction only god was ment to know about.
Crispy crunchy goodness encases whatever is inside (tonight was gar)
Add plenty o sea salt and serve with whole egg mayo mixed with mustard or lime or chilli or tom sauce or soy or a combo of a few things. Paprika and cayan pepper if ur not a wuss
Mmmmmm.....mmmmm
Must be served with a few beers both before and after serving. Ice cold of course

Will try yours. The one I have used for years (got off the web) - 1 cup of self raising flour, 1 teaspoon of salt, good pinch of bi-carb of soda and water. Mix up and ideally put in the fridge for a few hours before its needed. (often needs a little more water when removed from the fridge).
It is a light batter and has stood the test of time for me but will check out your recipe. :)

We don't deep fry but a light beer batter is our approach here. Let me just say that "Awesome Fish & Chips" at lakes Entrance have these fish and chip packs which we really love because of the batter. For $6 you get 5 pieces of flake and chips and the batter is similar to tempura, very thin and crispy.

sounds good dont forget to beat two egg whites and fold in makes it light and fluffy also a table spoon of custard powder

My one is pretty simple:
Crack a beer while filleting the fish and sample as you go.
Grab 3/4 cup of self raising flour in a bowl
If you have been sampling correctly, there should be about half your beer left at this stage.
Add it to the flour along with a pinch of salt and pepper and stir with a fork.
Crack another beer to sample while cooking your fillets. :thumbsup:

When we used to stop there for lunch on the way to Coota, Sally always had a feed of flatty tails from Awsome F&C, she's not happy that we go via Bruthen now.
