This is a ridiculously simple one.
small tin of coconut cream in baking dish.
Add shredded kaffir lime leaves and curry leaves.
Mix it all together and then place in the snapper whole.(Do I need to say scaled and cleaned) break up some coriander and place on top.
Cover with foil and bake. 160c for 10 mins, remove foil and cook rest of the way.
The beauty of this one is you get straight up baked snapper on the top.
When you get down to the bones, remove them. Now the bottom is a thai style baked fish in tasty sauce.
